Culatta

The Culatta is a fine and delicate cured meat from Emilia, similar to culatello, but with a process that includes the outer layer of fat, which makes it softer and retains its moisture. Produced mainly in the Parma area, it is matured slowly to enhance its flavour and tenderness.
